Natural Cold and Flu Remedy With Letibalm – the balm for nose and lips

I think its safe to say that Winter is on our doorstep. In terms of fashion, I am definitely a winter baby. I adore the boots, scarfs and coats and feel much more comfortable dressing up in Winter’s cozy layers then wearing flip flops and shorts. You’ll need:

1 cup of honey

2 lemons sliced

A chunk of freshly sliced ginger

Layer the lemon slices, ginger and honey in a sealable container/jar. A layer of lemon slices, a chunk of ginger and a big spoon of honey, repeating until you get to the top. Seal and place in the fridge for at least 12 hours for the flavours to infuse together. Stir before use as natural separation may occur and then add a big heaped teaspoon to your hot tea/water. If sealed this can last up to 2 months in the fridge. Keeping hydrated is half the battle won in winter and using this natural combination helps relieve any uncomfortable cold and flu symptoms.

  1. Keep the skin well-moisturised.

Homemade Bath Bombs

I’m jumping on the latest internet craze once again. Its safe to say bath bombs are pretty much everywhere. I was surprised to see how much these balls of scented goodness can retail for. Everyone loves baths, with my boys we often use little fizzies in the bath to colour up the water, and I just use them for their glorious scent and healing properties.

With mothers day coming up they are the perfect gift to give to someone special. You can customize color, scent, and shape to perfectly suit the person, and its a heck of a lot cheaper to make them at home. It was such a fun activity to do and the boys loved watching their balls form.

Ingredients:

1 Cup baking soda (Bicarbonate of Soda)

1/2 cup Epsom salts

1/2 cup Citric acid

2 tsp Essential Oil (I used Lavender)

1 tsp water

3 tsp Coconut Oil

Plastic moulds/ egg shells (I used those little plastic ornament shells for Christmas as well as egg shells). Silicon moulds work really well as well.

All these ingredients are natural so the bath bombs are safe for kids and toddlers. I chose to omit glitter, as pretty as it is, on purpose. Most glitter is made out of plastic and I have become quite conscious of what goes down our drains and into our water system. You can choose to add dried petals, or even those little magic grow beans to hide inside.

  1. In a bowl whisk together the baking soda, citric acid, Epsom Salts.
  2. In a separate small bowl combine the melted coconut oil, water and essential oil
  3. While whisking, very SLOWLY drizzle the liquid ingredients into the dry ingredients until well combined. You can choose to do this with a spray bottle. DO NOT be tempted to add more liquid. If the liquid gets too wet it will activate the fizzy part of the bath bomb too soon!
  4. TIGHTLY pack the mixture into each side of the mold then press the two sides together. Ideally let it stay in the mold overnight, then lightly tap around the mold with a spoon to very carefully open and remove bath bomb.

What I learnt:

It is so important to add in the liquid as slowly as possible. I have seen some people using a spray bottle for this step, just to ensure a thin mist. You do not want the Citric Acid to start reacting.

Some recipes contain Corn Starch, I chose to omit that on purpose as I wanted the bombs to be as natural as possible. My little guys suffer from Eczema and I didn’t want the corn flour blocking up their pores in any way. I would like to try that recipe in future though.

This is a messy activity so do it somewhere that’s easy to clean up. Citric Acid is easier to find then i thought, i searched Dischem and Clicks and ended up finding it at good old Pick n Pay, right next to the Bicarb.

 

This is one fun activity and now that I have all the ingredients on hand its time to play! I want to try mixing up essential oils and colours. Its a little addictive, and the boys loved it!

It’s a few days before easter, and as most families will be rushing out to stock pile their chocolate eggs and bunnies, take a moment to think, do I really need ALL of this sugar?

Last year I probably gained about 3 kilograms over the Easter period. I kid you not. We had some friends over on Easter Sunday for a lunch and of course the kids had an egg hunt, the week prior my mum and dad had visited and of course, we had another egg hunt. In addition to the dozens of chocolates the boys received from those activities, my husband is a serial egg addict. It would not be “Easter” without at least two boxes of marshmallow eggs being consumed and at least half a dozen of the white candy chocolate ones. SUGAR OVERLOAD!

So this year, I’m mixing it up.

I’m expecting the boys to receive chocolate from my mum and dad, that’s a given and every grandparents right 🙂 I also do have our iconic Lindt Bunnies adorning the tables, it just wouldnt be easter without them. This year for the boys however, apart from one or two hidden eggs for the hunt, we are largely going sugar free.

This year for our “hunt” I’m going back to old school. We get so caught up in the consumer trap and we wonder why our kids end up with diabetes, obesity and other diseases. The excessive lifestyle just gets worse every year. I always notice if the boys eat too many sugary treats that we often end up sick afterward. Sugar = Inflamation so I like to mix it up a bit.

 

Here are my top tips to do Easter, sugar free:

For our table decorations/activity/egg hunt I’m using good old hard boiled eggs. Soaking them in vinegar and painting our own little creations. What a perfect way to keep kids entertained. I’ll be hiding some of those in the garden too. Remember, the reward of the hunt is not “sugar”. Kids LOVE a treasure hunt regardless of what the treasure is! Its about the adventure, the challenge. Im also giving out cute little “carrot” playdoughs that I made up (using playdough and small piping bags). They make a gorgeous addition to the table and keep the kids entertained at the same time.

The base of our hunt is going to be the plastic eggs that are easily available at Westpack Lifestyle or Plastic land. They range from R3 to R12 per egg dependent on the size.  We also use these for sensory play and to make musical instruments so they dont get wasted at all!

I’m filling these with a number of “candy free” options, such as:

1.Hair clips/ties

2.Stickers

3.Slime (homemade or store bought)

4.Coins (as in money) – My boys are obsessed with money, the joy on their faces if they were to find eggs with actual money in would be second to none.

5.Mini erasers

6.Mini “Tickets” – You can create vouchers such as “Trip to the Zoo” or “Movie night”

7.Finger puppets

8.Lip Balm

9.Mini soldiers/ cars

10.Arts and Crafts Supplies

11.Seeds (if you had a mini gardener), the kits from my ecosprout are a great idea!

12.Bouncy Balls

13.Spin tops

18.Bath fizz bombs, we made our own here

As you can see the possibilities are endless, a perfect way to eliminate some of the unnecessary chocolate and candy, although we need a little, in moderation of course 🙂 If you have a child with allergies, this list is invaluable ! All of these items are available from the local China Mall/ Dollar store.

One thing South Africa certainly has down is some of the best “comfort” desserts. From Milk Tart to koeksisters and Malva Pudding we sure know how to make our tummies very very happy.

If a dessert has a National Day created for it, you know it has to be pretty exceptional. Yesterday, February 27th, was National Milk Tart Day in South Africa. Being a sucker for all things celebratory, of course I had to make one.

I have to admit I haven’t made a milk tart at home for probably close to 5 years, I haven’t needed to as there are so many good ones readily available. My Favorites are from Woolworths and “Upper Crust” bakery in Fordsburg.

When the craving does strike however, this recipe is pretty full proof. After so many years it still came out perfectly!

Ingredients:

For the base: 
500g (2 cups) of cake flour

65g butter

2 teaspoon baking powder

125ml sugar

1 egg

Pinch of salt

For the filling: 

4 cups of full cream milk

3 eggs

1 cup of Castor Sugar

Two Cinnamon sticks

2.5 tsps cornflour

2.5 tablespoons cake wheat flour

1 tsp vanilla essence

60g butter

 

 

METHOD

Base:
1) Cream the butter & sugar until pale, add egg and beat well.
2) Add all the ingredients until it comes together
3) Tip out into a well buttered tart pan and press into the pan to form a base. Bake at 180 degrees Celsius until lightly golden brown.

Filling:
1) Boil milk together with a few cinnamon sticks.
2) Beat eggs well, add sugar, corn flour, cake flour, salt & add to milk mixture.
3) Mix together and bring to a gentle boil until mixture thickens.
4) Add the butter & vanilla essence to the mixture. Pour onto base & dust with cinnamon powder.
5) Place in the fridge to set

Once it has set grab a cup of tea and enjoy this yummiest piece of heaven on a plate! Everyone always has different variations of Milk Tart, how do you make yours?

Incase you couldn’t tell my boys are a teeny bit obsessed with baking, what kid isn’t right ? They love mixing and rolling and cutting, and of course licking the bowl.

 

For the last few years we have made heart-shaped sugar cookies to give out to friends and teachers for valentine’s day.

There’s a lot of controversy around valentine’s and should we celebrate it, it’s just another excuse to suck in consumers, and yes, while that may be true, personally I adore the fact that there is actually a day to promote “love”. Not just love between a man and women, but love for all of those special people around us. There is so much anger and hate in the world; the fact that there is a day to bring awareness to love is just fantastic in my books. So I unashamedly celebrate valentine’s day, every single year.

Enough of the long story, here is my fail proof recipe for the perfect sugar cookie, thanks to my beautiful friend (and sugar cookie Goddess) Liezl.

Ingredients

3 cups all-purpose flour

1/2 tsp salt

1 cup (2 sticks), approx. 227 grams unsalted butter

1 cup castor sugar

1 large egg

2 tsp. vanilla

Sift the flour and salt

In a separate bowl cream together butter and sugar, add in the egg and vanilla.

Slowly mix in flour until the dough comes together.

Pull together in a bowl and chill in fridge

Set oven to 180 Degrees Celsius, roll out cookies and bake for 12 minutes

Icing

2 cups icing sugar, 3 tbsp. egg white, about 1 tbsp. warm water dependent on consistency. Beat on high.

OR, if you are low on time, head on over to Woolworths to buy their Royal Icing Mix.

 

Once the cookies have cooled pipe onto your cookies.

If there is one thing I despise in this world its icing sugar cookies, I honestly do not have the patience, or finesse to neatly do them. I would actually love to go on a course one of these days, but until then I let the boys do most of it with me. That way, I can blame the messiness on them ! 🙂

I have a little obsession with the Marvellous Creations popping candy chocolate that Cadbury’s released a few years ago … so when I came across a cookie recipe that had the chocolate in I knew I had to give it a go. Choc chip cookies are another one of my downfalls, this recipe is really moving to the top of my ultimate soft cookie list.

It’s actually quite surprising that any of the actual chocolate made it into the cookie dough!

Ingredients

50g softened butter

100g muscovado sugar

1 egg

25g cocoa powder

125g all purpose flour

1/2 tsp bicarbonate of soda

70g of chopped up Cadbury’s popping candy chocolate.

Preheat your oven to 180 degrees celcius .

Beat the butter and sugar together until soft and creamy, add in the egg and beat again until combined.

Add in the flour, bicarbonate of soda and cocoa, at this point mix in by hand so you don’t overbeat it.

Finally fold in the chocolate bits. Scoop up a heaped teaspoon of the cookie dough and roll it into a ball between you two hands (my kids did this).

Place the balls on a lined baking tray and bake for 15 minutes .

Try not to eat all of them at once, personally I like them a little warm still so the chocolate is gooey.

Picky eaters – 6 hidden vegetable meals to put your mind at ease

Lets talk about picky eaters, because I know, at some point it is something every single mum will experience.

Up until a couple of months ago I would have said my boys were pretty good eaters, in fact, I was confident that they were eating a good, balanced diet. Aadam loves his “mealies”, broccoli, raw carrots and peas, (He will not however, touch raw tomatoes, potatoes, butternut) and Yusuf eats pretty much EVERYTHING. Fast forward a few months and I find myself getting stuck in a rut and I feel like he’s surviving on bread, pasta, carrot sticks and cucumber. (partly due to my own laziness).

Lessons learnt

When Aadam started solids I pretty much pureed and mashed everything up for him for FAR FAR too long. I think it’s the first time mum syndrome, you are paranoid your child is not eating enough so you mash it up and make it easy for yourself to quickly feed them. Funnily enough, he used to eat a TON of mashed potato and butternut then (explains a lot now). With Yusuf however, at about 4 months old he grabbed a piece of wors (sausage) from my hand one day, and literally stuffed it in his mouth, our sign he was ready. With him I took more of a “baby led weaning” approach, pretty much letting him eat whatever he wanted as long as it was easy enough to hold and soft enough to dissolve. I do think that has made a huge difference in their eating habits, and if we were to have a third child I would definitely do that again.

I’ve noticed a definite difference as well with 2 things. By my kids picking the veggies themselves, they are more likely to eat them! I’ve learnt through this that Yusuf loves Celery and Aadam adores Aubergine ! Secondly, getting them involved in the cooking peaks their interest and they have more desire to taste the food they have created, so wherever you can, get them involved in the prep work. One of my boys favourite things to do is to peel corn and top and tail beans!

That being said, here are 6 of my favourite “hidden veggie” recipes, for all of those days/times I feel like my kids have not have a balanced diets and I need to be a bit sneakier :

  1. Chicken fried rice – This is my non brainer for a Sunday evening, especially if you have left over rice or chicken in the fridge. Sautee some diced onion in olive oil with some garlic until soft. Add in chicken, if its uncooked fry until lightly browned (I flavour mine with chicken spice, garlic and rustic herb and a pinch of paprika). Next, I add finely diced peppers (red and yellow) together with a cup of the good old McCain mixed veggies (peas, carrots and mealies) and soften down. Add in your rice and mix well. I push everything to the side and add in a beaten egg and scramble it in the same pan at this point and then incorporate into the rest of the pan. Finally I add in a bit of Soy Sauce and Tomato Sauce for the kids.
  2. Lasagna – Always a sure way to get Veggies into my kids. I finally dice up peppers, carrots and sometimes mushroom to add in mine
  3. Stews are a no brainer – I have to be careful here though, Aadam refuses to eat cooked carrots (beats me as he will eat a whole pack raw), so when I dish for him I have to mash the carrot up a little so it’s not as obvious
  4. Hidden Veggie Chicken + Rice – This is a one pot wonder and another one of my favourites. You can view the full recipe here , I have tried it out with diced up cauliflower and broccoli added in as well and it’s been fabulous
  5. Hidden Veggie Pasta Sauce – I’ve always used Annabel Karmels’ recipe for this one and the whole family loves it! It includes peppers, carrots and courgettes.
  6. Ratatouille – Funnily enough – with all my kids quirks, they both LOVE ratatouille! I add pretty much whatever I have in the fridge but typically its aubergines, courgettes, tomatoes, onions and peppers. I serve it with Bulgur wheat, which we call “special rice”.

A lot of this I only have myself to blame, for example, I never thought to give them soup (though I love it), I left it too late and now they won’t touch it! Smoked Salmon/ Trout is another example, I sat in awe the other day watching a friend’s 1 year old happily munch away on smoked trout, if I tried to give it to my boys I’m sure they would throw it in my face! Again, my own fault, I never thought to give it to them.

Studies do show that if you put vegetables on your child’s plate every night, within a few months they will eat those vegetables, so it’s all about exposure and leading by example I guess. We will keep persisting.
