15 Minute Meals – Salmon Teriyaki Pad Thai

This Salmon Pad Thai is packed full of nutrients, is loaded with flavour and it is ready on your dinner table in UNDER 15 MINUTES. This is one recipe you absolutely need to try and save for your busy mid week meals.

It is a long overdue series on my blog. I am always on the look out for quick, nutrious meals, but the last few weeks at work has left me under even more time pressure then usual when making dinner. As a family, we have also been trying to make a more concious effort to eat healthier food, and If I could, I would “eat the rainbow” everyday. I just love colourful food. So here it is, couldn’t be simplier.

For the Salmon Teriyaki :

1/4 cup Soy Sauce

5 TBSP packed brown sugar

1 TBSP honey

1 TSP garlic

1/2 TSP ginger

Fresh Chilli to taste

Pop your salmon into the marinade for about 5 or 10 minutes before cooking. Place your salmon into a foil envelope and air fry for between 7 to 12 minutes, dependent on thickness, at 200 degrees celcius. While that is cooking, boil the water and chuck in your Pad Thai noodles, edamame beans, broccoli and boil for 2 minutes. Drain.

Once the Salmon is cooked, layer your noodles, beans and broccoli and Salmon. Garnish with Sesame seeds, coriander, baby spinach and spring onion. Drizzle with the remaining sauce.
