Beef with Broccoli is a regular feature in our house, and with the help of an Instant Pot for your Jasmine Rice, this meal is done in under 15 minutes. The beef is tender and flavourful and a winner across the family. As always, full video tutorial is linked at the bottom of the article.
For the Rice:
2 cups Jasmine Rice
2 cups water
1 tsp coconut Oil
For the Beef/ Broccoli:
500g sliced steak (I used fillet, but you could use flank)
2 cups broccoli
1 TBSP Cornstarch and 2 TBSP water to marinade your meat
3 cloves garlic
3 or 4 cups Broccoli florets
1 small onion sliced
1/2 red pepper
For the Sauce:
1/3 cup soya sauce
1/3 cup water
1 TBSP Brown Sugar
1 TSP ginger
1/2 tsp green chilli
1 tsp cornstarch
Switch on your Instant Pot, rinse your rice until it runs clear and then add into add into your Instant Pot with water and oil. Set to Pressure cook for 6 minutes, with a natural pressure release.
Marinade your beef in cornstarch and water, fry in a shallow pan until brown. Add in onions, garlic and peppers and sautee until soft. When cooked, add in sauce and simmer for a minute until thick.
Garnish with coriander, sesame seeds and sliced fresh red chilli.
